Damson Jam

The most flavourful and possibly our favourite jam, at least in the stone fruit sector. Damsons, like many plums, are “cling fruit” which means the flesh is stuck to the stones. So we cook whole and pass them through a sieve to remove them. Then we set with sugar and add fresh lemon juice to “season” just before we pot up. The texture is smooth, the flavour is sharp and sweet as it should be.

• Made at Water Lane in small batches.
• 220g min net weight.
• 53g of fruit to 100g, total sugar content 
• Once opened keep refrigerated and use within one month.
