Strawberry Jam

The quintessential British berry that is associated with high summer, Wimbledon and scones.  We worked hard to get the right set on this popular jam. Strawberries are very low in pectin and are notoriously difficult to set. We made an “apple stock” using cooking apples and water. This is added during cooking and helps get the preferred set.

• Made at Water Lane in small batches.
• 220g min net weight.
• 51g of fruit to 100g, total sugar content 60%
• Once opened keep refrigerated and use within one month.
